-Communicate clearly and often with Kitchen staff, fellow members
of the Chef team and colleagues throughout the Food and Beverage
-Own the food presentation for guests dining in SCO F&B outlets
as well as Staff dining menus.
-Contribute to the process of developing menus for all SCO outlets,
while promoting the concepts.
-Order all required product to maintain sufficient inventory all
while backing into budgeted food cost of xx%
-Organize all areas of the kitchen including prep, hotline stations
and boh storage.
-Manage the flow between breakfast/lunch, dinner and overnight

-Manage and speak to Culinary labor on a weekly basis.
-Attend monthly business review with notes explaining people,

-Develop seasonal menus that highlight fresh, local product, and
oversee their recipe design and output.
-Develop a comprehensive understanding of Birch street including
but not limited to costing, recipe input, ordering and purchasing
-Assist in the payroll process for the Kitchen team.
-Act as Kitchen department leader in absence of EC or ESC.
-Lead with integrity and inspire camaraderie in an intense

The ideal candidate will have:
- 3-5 yr sous chef/manager experience
- Flexibility is key
- Strong experience in Spanish influenced cuisine
- Ala carte dining / all day dining / In Room Dining
- Banquet / Catering experience
- Strong organizational skills
- Aspiration to grow within the Culinary team
- Must be interested in all aspects of Culinary- not an Alacarte
