The Opportunity:

The Four Seasons Resort Scottsdale is in search of a Passionate Chef with an interest to inspire and lead an ambitious Team in a Five Diamond Setting in North Scottsdale! In our Spanish inspired restaurant, the Chef will collaborate with some of the best in the city to create Spanish inspired cuisine, chops and seafood dishes. The menu focuses on traditional and modern takes on Spanish classics, emphasizing prime cuts of meat from boutique purveyors, a wide variety of seafood and vegetable tapas, hand-crafted paellas, as well as local produce from surrounding Arizona farms. The Restaurant Sous Chef will oversee the Restaurant team by following the behaviors listed below;

Job duties include but are not limited to:

-Oversee staff training and development for menu changes,
-Communicate clearly and often with Kitchen staff, fellow members of the Chef team and colleagues throughout the Food and Beverage division.
-Develop & foster strong relationships with SCO team."Master your Craft"

-Own the food presentation for guests dining in SCO F&B outlets as well as Staff dining menus.
-Contribute to the process of developing menus for all SCO outlets, while promoting the concepts.
-Order all required product to maintain sufficient inventory all while backing into budgeted food cost of xx%
-Organize all areas of the kitchen including prep, hotline stations and boh storage.
-Manage the flow between breakfast/lunch, dinner and overnight cleaning shifts.
-Manage Catering events with assistance from Team
-Manage and speak to Culinary labor on a weekly basis.
-Attend monthly business review with notes explaining people, profit, and product.
-Develop seasonal menus that highlight fresh, local product, and oversee their recipe design and output.
-Develop a comprehensive understanding of Birch street including but not limited to costing, recipe input, ordering and purchasing processes.
-Assist in the payroll process for the Kitchen team.
-Act as Kitchen department leader in absence of EC or ESC.

-Build rapport with purveyors, chefs and local peers within the restaurant community.

The ideal candidate will have:

- 3-5 yr sous chef/manager experience
- Flexibility is key
- Strong experience in Spanish influenced cuisine
- Ala carte dining / all day dining / In Room Dining
- Banquet / Catering experience
- Strong organizational skills
- Aspiration to grow within the Culinary team
- Must be interested in all aspects of Culinary- not an Alacarte "specialist"
